1) Step 1 

Set the oven to 160°C for the fan, 180°C for conventional, or gas mark 4. Grease and line an 18cm round, 7cm deep cake tin with greaseproof or parchment paper. 

2) Step 2 

In a large bowl, mix together the flour, bicarbonate of soda, and all the spices. Add the butter and utilise your fingertips to rub it into the flour; till the mixture looks like fine breadcrumbs. 

3) Step 3 

In a medium saucepan, heat the sugar, treacle, syrup, and milk, gently stirring until the sugar has dissolved. Increase the heat and bring the mixture to just below boiling point. 

4) Step 4  

Mix the stem ginger into the flour mixture, then add the treacle mixture, stirring with a wooden spoon. Crack in the egg and beat until the mixture is well combined and has the consistency of thick pancake batter.  

Transfer the batter into a prepared tin, and bake for 50 minutes or 1 hour. You can do it or until a skewer inserted into the centre comes out. Let the cake to cool before taking it out of the tin.  

5) Step 5 

To make the icing, combine the sugar and lemon zest, then gradually add the lemon juice, mixing until the icing is smooth and slightly runny. Drizzle the icing in a zig-zag pattern over the surface of the cake, turn the cake around, and drizzle again to create a cross-hatched finish. The cake keeps for up to 2 weeks when stored in an airtight container.
