1) Put your oven to 180°C (160°C for fan ovens) or gas mark 4. Prepare a 20cm square cake tin by greasing it and lining it with nonstick baking paper. In a bowl, you can beat the sugar, vanilla extract, and butter with an electric whisk for around 1/2 minutes until the mixture is light and fluffy. 

2) Add the eggs one at a time, whisking after each addition. If the mixture starts to split, add 1-2 tablespoons of flour. Gently incorporate the remaining flour and custard powder using a metal spoon; till well combined. 

3) Spoon the batter into a prepared tin and bake for about 40 minutes, or until a skewer inserted into the centre comes out clean. Cool the cake for 10 minutes, then transfer to a wire rack to cool completely. 

4) To decorate, you can mix the icing sugar with 1-2 tablespoons of boiling water (adding one teaspoon at a time) to create a thick, pourable icing. Spoon the icing over the cake and use the back of the spoon to spread it to the edges. Sprinkle with decorations. Cut into 16 squares to serve. The cake will be kept in an airtight container for up to 3 days.
